How To Make Laffa Bread

Laffa is prepared by frying the dough in a pan after it has been left to rise.  Laffa bread is typically served with Middle Eastern foods and flavors.  The end result is a wonderful, blistered, chewy flat-bread that goes perfectly with fresh hummus.


Ingredients

 
  • 7 cups bread flour plus an additional 1/2 cup as needed
  • 1 package dry rapid rise yeast
  • 2 tablespoons sugar
  • 1 teaspoon kosher salt
  • 1/4 cup olive oil
  • 3 cups warm water

Instructions

  • Put the flour, yeast , sugar and salt in the bowl and mix them properly. Add the oil and water to the mixture and dough them until the dough becomes very smooth. You can also use dough mixer or can dough by hand.
  • Now, place the dough in an oiled mixing bowl and put it in plastic wrap so that it settles well.  Dough will become slightly springy and  soft and now turn dough out onto a floured work surface and form into a 10-12 balls.
  • Preheat the grill pan to medium. Now, sprinkle a small amount of flour on a work surface and top of a dough ball; gently pat dough ball flat with your fingers, forming a flat, round bread about 1/4 inch thick. Let dough round rest for 5 minutes. Do the same with remaining dough balls.
  • Place the laffa on the hot grill surface. When the bread begins to puff up and the side touching the grill has grill marks, flip it over.
  • Repeat with the other dough balls. Laffa bread will begin to puff up and fill with hot air. Stack cooked breads on a plate; when cool enough to handle, break breads in half and open the pocket inside for stuffing.
