 You're probably using a charbroiler of some kind if you're making flame-kissed burgers, juicy steaks, or succulent chicken breasts with tantalising grill marks. What is a charbroiler?

Charbroilers are a perfect way to offer beef, chicken, fish, and other foods a smoky, char-grilled flavour while also adding tantalising grill marks to sandwiches and vegetables. They normally work at temperatures of 550 degrees Fahrenheit or higher. Burners are spaced at around 12 - 15" intervals across the bottom of the panel, with high-end models having less space between burners for more even heating, control, and improved performance.

Types of Charbroilers

  • Countertop Charbroilers: These units can be used with an equipment stand or even a refrigerated chef platform. There are both gas and electric models available. You can choose between radiant and lava rock types in the gas models. To keep them off the counter, most have short legs.
  • Freestanding Charbroilers: A charbroiler that stands alone has its own legs. Many models come with a cabinet-style base that helps you to keep plates and platters close at hand. The overall purpose and other design elements are identical to those of a countertop model.
  • Outdoor Charbroilers: Catering applications, such as country clubs, resorts, and other similar sites, commonly use outdoor charbroilers. There are a variety of accessories available, including rotisseries, dome lids, and even side burners for sauces and sides.

Electric Charbroilers vs. Gas Charbroilers

Electric charbroilers are available for companies that do not have access to a gas supply line and heat food using elements. The use of radiant and lava rock heating to cook food is much more common in gas charbroilers. Gas charbroilers are available in liquid propane and natural gas configurations, and many come with conversion kits so you can turn to the appropriate fuel source as required.

Features to Consider

  • Reversible/Adjustable Grates: The majority of charbroiler grates are made up of parts that can be cut for cleaning. You can also mix and match widths and styles to fit various foods with this sectional template.
  • Grate Material and Style: Cast iron cooking grates are standard on virtually all commercial charbroilers. Cast iron is a tough material that carries heat well. Stainless steel or chrome-plated grates, which are more corrosion-resistant than the cast iron grates more commonly used in indoor charbroilers, can be used for outdoor charbroilers.
